Eggless/vegan Melt In Mouth Healthy Cookies
Ingredients
300g 100% vegetable margarine, I have used Selection Du Chef + 1, 2 tbsp regular vegetable margarine (optional if dough is too dry
3 cups plain flour
1/4 cup icing sugar
1/4 tsp baking soda/bicarbonate
150g date paste
1 tsp cardamon powder
Method
Cut the baking margarine in tiny cubes to make it easy to work.
Add the flour, icing sugar and baking soda and mix. Then knead well.
Do not use any other margarine or oil for this recipe. In case the dough is too dry then add 1 or 2 tbsp of other regular vegetable margarine like Flora. Do not add water.
Make out 24 little balls, about 2" size. Then for the date, mix it and knead with cardamon powder, make 24 little date about 1" size.
Flatten each dough and place the date then to close, pinch, tuck and roll the dough to seal. Proceed for all. Then flatten them a little bit.
Line a cookie tray with non stick baking paper.
Place the cookies leaving 1.5 cm distance between in case they spread during baking.
Preheat the oven 275℃ for 10 minutes. Bake for 15 or until light golden in color.
Result must be crunchy and melt in mouth!
