Japanese Cotton Cake Easy and Best Recipe Recette Cotton cake



My moist and fluffy cotton cake which I have tried for the first time was so scrumptious!
The texture is so unique compared to genoise, chiffon etc, almost like cotton itself :)

Ingredients:
4 mdium eggs (4 whites and 4 yolks)
1/4 cup of liquid milk
2¹/₂ tbsp of salted butter or baking margarine (no trans-fat)
2/3 cup of plain flour
1 tbsp of vanilla essence
6 tbsp of powdered brown sugar or powdered white sugar
(Margarine for greasing + parchment paper (non - stick)

Method:
1. Grease a 8 inches x 5 inches baking tin and line with parchment papers, including the sides which should be 2 inches taller. Grease the inside as well with margarine.
2. Take 4 medium eggs (room temerature), separate the whites and the yolks.
3. Whisk the 4 yolks well, add the 1/4 cup of liquid milk, whisk and 2 ¹/₂ cup of softened butter or margarine. Whisk well.
4. Gradually combine 2/3 cup of flour in small portions, whisk after each addition. Set aside.
5. Beat the 4 whites on high speed until foamy.
6. Gradually add the 5 tbsp of brown sugar in little portions, beat for 30 secs on high speed after each addition. Add 1 tbsp of vanilla essence and beat for 30 sec.
7. Add 1/4 of the whites into the yolks batter and mix thoroughly.
8. Add 1/2 of the whites and yolks mixture into the whites and fold gently without deflating the whites. Add the remaining and fold to mix until corporate. The batter will look fluffy and smooth!
9 Pour into the prepared baking tin. Tap the bottom of the tin very slowly. Like hold and drop to prevent air bubbles.
Place the cake tin in the baking tray and in the middle rack of the oven. Pour some boiling water on the tray as you would to for soufflé.
10. Bake for 25 - 30 minutes. During baking, rotate the cake tin after 15 minutes for even baking. And continue to bake for remaining 10 - 15 minutes.
11. Test if the cotton cake is well bake, simply insert a toothpick in the middle, pull it out to see if the toothpick is clean.
12 Remove from oven, let cool for few minutes. Remove the parchment paper from the side. And cover the tin, invert to remove the tin.
13. Sprinkle with some icing sugar, I don't thick this moist cake will require frosting. It is so good, that you will enjoy every bites!!!
14. Slice and serve.
